Total Time: 55 minutes
*This recipe makes about six servings.
Ingredients:
2 tablespoons unsalted butter
2 tablespoons olive oil
1 ½ cups chopped large onion
2 cloves minced garlic
½ lb. sliced and peeled carrots
3 stalks sliced celery
1 ½ lbs. boneless and skinless chicken thighs, cut into 2-inch chunks
5 cups low-sodium chicken broth
½ cup KAL Nutritional Yeast Flakes
Salt, to taste
Ground black pepper, to taste
3 round slices fresh lemon, seeds removed
¼ teaspoon ground turmeric, optional
8 ounces egg noodles
¼ cup fresh parsley, chopped
Freshly grated Parmesan cheese, to taste
Instructions:
- Melt the butter and oil in a large pot over medium heat. Once the butter is melted completely, add the onion, garlic, carrots, and celery. Stir and cook until the onion is softened and translucent.
- Add the chicken thighs, chicken broth, nutritional yeast, salt, black pepper, lemon slices, and turmeric. Bring to a simmer, stirring occasionally.
- Once it’s simmering, lower the heat to low-medium and partially cover the pot. Let it cook for 35 minutes.
- At 35 minutes into cooking, add the egg noodles. Let the noodles cook in the broth mixture for 10 minutes alongside the rest of the ingredients, stirring occasionally.
- Once the chicken is tender and shreds easily with a fork, remove the lemon slices.
- Check that the noodles are cooked al dente, as per package instructions. Once cooked, add the parsley to the soup, then stir.
- Serve the soup warm and sprinkle the parmesan cheese on top. Enjoy with the family on a chilly winter day!
